The first step is to prick the potatoes with a fork a few times and then put them in the microwave until they are cooked all the way through (this can take somewhere between five and eight minutes).
Once cooked, cut them in half then scoop the potato out of its skin and into a bowl. Add butter and 'mash' with a fork. Salt and pepper to taste. Adding milk or cheese can make them creamier. Of course some folks like to dice and keep the skin on before mashing while seasoning with a bit of Nutmeg.
The only easier way to make mashed potatoes, for me, is to simply let my husband do it. He is a Mashed Potato Making Marvel! His time saving tip is to prick potatoes then boil in water until tender. Drain, rinse and carefully pull potato skins off. Mash with or without skins, add milk, butter, and season to taste.
