Instapot Toss It In chicken dinner

Mondays are are days to get back in the swing of things so make dinner the easy way and just "Toss It In"...

A while back I got on an Indian food kick (easier for me to eat than to cook, apparently.)  As I had plenty of spices left around and Italian food is always a favorite; I mixed the two. Here is my Toss It In chicken dinner that turned out great!


4 raw thawed boneless skinless chicken breast cut into 1 inch chunks (use thighs if that's what you have)

1 jar of spaghetti sauce (24 oz.)

Carrots chopped (I used the leftover half bag of pre-sliced carrot disc)or frozen veggies would work too

4 red potatoes cut into 1 inch chunks (use whatever you have on hand)

1 can of black beans rinsed and drained (feel free to use whatever can of beans you have on hand just be sure to rinse them)

½ cup of water or better still chicken broth if you have it

3 Garlic Cloves (teaspoon of dried if that's what is on hand)

1 tbls dried minced onion or one small to medium onion diced

1 tsp of ground ginger

1 tsp of basil

1 tsp of rosmary

½ tsp of cumin

½ tsp of cardamon (1 tbl spoon of Lemon juice will do in a pinch)

½ tsp of garam masala  (don’t have it? Try nutmeg and pepper for a kick)

Salt and pepper to taste


Spray cooking spray into your crock pot or pressure cooker pot. Gently stir in ingredients. Cook on low 4-6 in a slow cooker of 15 minutes in a pressure cooker. Enjoy!
